SALMON MANGO & AVOCADO BOWL

  • • 1/4 cup G Hughes Zero Sugar Original BBQ Sauce

    • 1/2 cup mango, diced

    • 1 cup cooked quinoa

    • 1/2 cup avocado, diced

    • Heaping 1 tablespoon diced red onion

    • 1 tablespoon chopped cilantro

    • 1 salmon filet

    • Non-stick aluminum foil

  • 1. Create a foil bag by folding and crimping three sides of a piece of non-stick foil, leaving one side open.

    2. Place the salmon filet inside the foil bag and crimp the open end closed to seal.

    3. Preheat your grill to 400–500°F. Place the foil packet on the grill, close the lid, and cook for 10–12 minutes. Remove from grill and let rest briefly before opening the packet.

    4. In a bowl, combine diced mango, red onion, avocado, and chopped cilantro. Mix gently.

    5. Add the cooked quinoa to the bottom of a serving bowl. Top with the fresh mango salsa.

    Gently place the grilled salmon filet on top. Drizzle G Hughes Zero Sugar Sugar-Free Original BBQ Sauce on top.
